Crispy Chicken Burger
A simple and delicious crispy chicken burger with soy mayo, shredded lettuce, and cilantro on a brioche bun.

Method

Make the soy mayo by mixing mayo, soy sauce, fish sauce, white pepper and sesame oil.

Prepare three bowls for breading: one with flour, cornstarch, salt and spices, a second one with whisked eggs and a third one with panko, salt and spices.

Dip the chicken in the flour, then the egg, and finally in the panko.

Fry the chicken. In an air fryer: cook at 190°C for about 20 minutes. Shallow fry: pan-fry in ca 1 cm oil for about 4 minutes per side over high heat.

Toast the brioche buns, shred the lettuce and chop the cilantro.

Assemble the burger: spread the soy mayo on the buns, add the lettuce, the chicken, and the cilantro.
