Smash Burgers

The secret to a great smash burger is three-fold: the meat, the bun, and the sauce. Use high-fat ground meat, brioche buns, and a simple but delicious sauce like this truffle mayonnaise.

Ingredients

  • Ground chuck (or other high-fat ground meat)400g
  • Brioche buns2
  • Yellow onion2
  • Mayonnaise1.5 dl
  • Truffle oilto taste
  • Saltto taste
  • Black pepperto taste
  • Cheese slices (e.g. cheddar)4
  • LettuceOptional
  • TomatoOptional

Method

  1. 01

    Thinly slice one onion and slow-cook on low heat until caramelized.

    Make the sauce: Finely chop the other onion. Mix with mayonnaise, truffle oil, salt, and pepper in a bowl.

    Prepare any fresh toppings like lettuce and tomato.

    Form the ground meat into balls. Place in a hot pan and smash them flat.

    Cook the patties on both sides. Place cheese on top to melt during the last minute of cooking.

    Toast the buns.

    Assemble the burger with sauce, patties, caramelized onion, and any other toppings.
